Mine:

f(x) = sin(x) - u_(2*pi)(x) * sin(x)

Where u_n(x) is the step function.

e^x because its slope everywhere is equal to its value.

I like e^(i pi) + 1 = 0. It contains five of the most fundamental constants of math, all in a single function. i, pi, e, 0, and 1 - beautiful, how they are all related...

Update: Oops, had the wrong sign...

y=x^-x^2
where -2.5 < x < 1
-2 < y < 2

f(x)=e^x

Best function ever.

Perhaps this should be separated between 'favorite' functions, most useful functions, and favorite equations.....
